Observatory Bar is nestled off the main lobby, forming a picturesque setting of plush upholstered couches and curvy, dark timbers. Elegant tub chairs in golden-brushed velvet, teal velvet straight-backs, and quaint mushroom ottomans surround surfaces exuding the quiet luxury of marble and brass.
Evocative cocktails, hard-to-find spirits, and rare whiskies and gins support an extensive wine list, all served by the glass. Executive Chef Dave Whitting has created a menu offering a delicious selection of dishes featuring fresh local produce and inviting flavours, all designed to share.
“For me, it’s all about the food. Observatory Bar’s shared presentation of food takes me back to my time on the beaches, eating and laughing with friends and family, passing plates across the table and eyeing off the last piece that’s always left,” says Whitting. Prior to The Langham, Sydney, Chef Dave Whitting opened Bistro Guillaume at the Crown Perth as head chef, and worked alongside Guillaume at Bennalong in Sydney.
